  2. In a large bowl, combine cooked quinoa or rice, chickpeas, diced tomatoes, feta cheese, chopped parsley, chopped mint, extra virgin olive oil, minced garlic, ground cumin, salt, and pepper.
  3. Stuff each bell pepper half with the quinoa mixture and place them in the prepared baking dish.
  4. Cover the baking dish with foil and bake for 25-30 minutes, or until the bell peppers are tender.
