Ingredients:
- 500g boneless chicken, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust according to your spice preference)
- 1 teaspoon garam masala
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 2 tablespoons butter
- 1 tablespoon vegetable oil
- 1 medium-sized onion, finely chopped
- 2 tomatoes, pureed
- 1 cup heavy cream
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions:
1. In a bowl, combine the yogurt, lemon juice, cumin, coriander, turmeric, red chili powder, garam masala, ginger paste, and garlic paste. Mix well.
2. Add the chicken pieces to the marinade and coat them evenly. Allow the chicken to marinate for at least 1 hour, or overnight in the refrigerator for best results.
3. Heat the butter and oil in a large skillet or pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
4. Add the tomato puree and cook for a few minutes until the oil starts to separate from the mixture.
5. Add the marinated chicken to the pan, along with any remaining marinade. Cook for about 8-10 minutes, or until the chicken is cooked through.
6. Reduce the heat to low and stir in the heavy cream. Simmer for an additional 5 minutes, stirring occasionally.
7. Taste and adjust the seasoning with salt if needed.
8. Garnish with fresh cilantro leaves before serving.
9. Serve the butter chicken with steamed basmati rice or naan bread.
