Ingredients:

For the Chole (Chickpea Curry):

- 1 cup dried chickpeas (soaked overnight and boiled until tender)

- 2 onions, finely chopped

- 2 tomatoes, pureed

- 2 teaspoons ginger-garlic paste

- 2 green chilies, slit

- 1 teaspoon cumin seeds

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon coriander powder

- 1 teaspoon garam masala

- Salt to taste

- Fresh coriander leaves for garnish

- 2 tablespoons oil


For the Bhature (Fried Bread):

- 2 cups all-purpose flour

- 1/4 cup semolina (optional)

- 1/4 teaspoon baking powder

- 1/4 teaspoon baking soda

- 1/2 cup plain yogurt

- 1 tablespoon oil

- Salt to taste

- Oil for frying


Instructions:

For the Chole (Chickpea Curry):

1. Heat oil in a pan and add cumin seeds. Let them splutter.

2. Add chopped onions and sauté until golden brown.

3. Add ginger-garlic paste and green chilies. Sauté for a minute.

4. Add tomato puree and cook until the oil separates from the mixture.

5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

6. Cook the spice mixture for a few minutes, then add boiled chickpeas and mix well.

7. Add water as needed to achieve the desired consistency. Simmer for 15-20 minutes to allow the flavors to meld together.

8. Add garam masala and mix well. Adjust salt and spices according to taste.

9. Garnish with fresh coriander leaves and keep the Chole warm.


For the Bhature (Fried Bread):

1. In a mixing bowl, combine all-purpose flour, semolina, baking powder, baking soda, and salt.

2. Add yogurt and oil. Mix well.

3. Gradually add water and knead to form a soft and smooth dough. The dough should not be too sticky or too dry.

4. Cover the dough and let it rest for at least 2 hours.

5. After resting, divide the dough into small portions and roll them into round discs or oval shapes.

6. Heat oil in a deep pan or kadai for frying.

7. Once the oil is hot, carefully add the rolled Bhature to the oil. Fry them until they puff up and turn golden brown on both sides.

8. Remove the fried Bhature from the oil and drain them on a paper towel to remove excess oil.


Serve the hot and crispy Bhature with the Chole (Chickpea Curry). You can also serve it with pickles, sliced onions, and yogurt on the side. Enjoy your homemade Chole Bhature!
