For a few fleeting weeks each spring, Maine's spruce trees offer up tender new tips bursting with unexpected flavor. Katherine Swann hand harvests them during this brief season, then slowly macerates them in organic brown sugar using a traditional process that draws out their fragrant natural oils. Rich and undiluted, the resulting small-batch syrup captures notes of evergreen, citrus, and fresh woodland air in every spoonful. Made with hand-harvested Maine spruce tips macerated in organic brown sugar. Drizzle over ice cream, fresh fruit, yogurt, pancakes, waffles, scones, and other desserts. Add to cocktails and mocktails for a bright botanical note. Pair with cheeses, whisk into vinaigrettes, or use as a glaze. See nutritional information here. Handmade in Maine.
